Escorpion is a regionally inspired Mexican tequila bar and cantina from chef-owner Riccardo Ullio that captures the authentic tastes and ingredients indigenous to Mexico. We’re delighted to welcome Executive Chef Luis and Bryan Scheetz, who will take you on a culinary journey as explore both the food and beverages of Mexico. Chef Luis will share recipes from different regions as bar manager and mixologist Bryan talks tequila, mezcal, and more. The class menu from Chef Luis: Traditional Salsas – Classic Salsa Verde, Charbroil Roasted Salsa, Enchilada de Guajillo, Enchilada de Tomate, and Salsa de Aquacates; Classic Guacamole; Ahi Tuna Ceviche; Arrachera Taco – grilled marinated skirt steak; and Grilled Chicken Tostadas. From the bar, Bryan Scheetz will not only pair drinks – Margaritas, Mezcal; Sotol – to go with the food, he’ll teach and explain the history, production, differences and varieties of tequila, Mezcal, agaves, Marisol, and Sotol.
